This is a delightful Mexican coffee, decaffeinated using the Mountain Water Process and proudly certified by the Rainforest Alliance.
Did you know that more than half a million farmers grow coffee in Mexico? A whopping 70% of them are smallholders working on farms smaller than 10 hectares – think family-run plots where the whole gang pitches in. Many of these farms are naturally organic, and quite a few boast certifications too.
What makes this coffee extra special? Well, it not only meets the Rainforest Alliance’s high standards – promoting biodiversity, sustainable land use, and responsible water management – but it’s also decaffeinated naturally, without chemicals, thanks to the 'Mountain Water' Process. That means all the flavour, none of the caffeine.
So, how does the Mountain Water process work? Picture this: green coffee beans take a long, refreshing soak in water. This clever bath draws out the caffeine and other soluble compounds. The first lot of beans is sent on its way, but the water, now full of coffee flavour goodness, is kept. When the next batch of beans takes a dip in this flavour-packed water, only the caffeine gets filtered out, leaving all the lovely taste behind. No chemical solvents needed, just pure, natural decaf magic!
